Day Trip to the Catskill Animal Sanctuary
We are in the planning
stages of a day trip up to the Catskill Animal Sanctuary this spring.
Located two hours north of New York City, CAS provides a safe and loving
haven for abused horses and farm animals - animals who have never
known warm shelter, spacious pastures, good food, or the touch of a
kind hand. Since 2001, CAS has provided refuge for over 1,700 such
animals, and served as a center to raise awareness of their
mistreatment and its impact on all of us. Depending on interest, we may
offer a special tour for children. It's a great way to plant the seeds
for young minds in a compassionate and active way. It's a lovely place
to visit or support, check out their website and contact me if you are interested.

Gourmet To Go: Healthy Eats in Bridgeport

If you discover sweet potatoes and spinach
in your fudge brownies at Green Gourmet to Go don't be surprised.
OK, you can keep that a secret from your kids because the veggies are
not detectable in these moist, chocolatey bites or in the Blondies
with a sweet potato base. The chocolate (anti oxidants a
plenty!) masks the veggies and you will be better off for having added a
few more to your daily intake. My fave desserts were the peanut butter
chocolate chip cookies and the almond oaties. They tasted most like
what I would expect (read: crave) from a cookie. Imagine eating
your veggies in your dessert! I didn't mean to jump to the end
first but I was so enthralled by the ingredients list that I did
exactly that!

Green Gourmet to Go makes eating healthy easy,
approachableElizabeth Keyser, Fairfield Citizen, Friday, April 9, 2010
Linda Soper-Kolton wants to make eating healthy meals easy and
approachable. The Fairfield resident recently opened Green Gourmet To
Go, which will offer local, organic and vegetarian and vegan meals from a
small storefront on Fairfield Avenue in Black Rock.
Soper-Kolton was a lifelong food lover and dedicated home cook, and
had been working in marketing for more than 10 years at Save the
Children in Westport, when she decided to attend the Natural
Gourmet Institute (NGI) in New York City. The year-long program
opened her eyes. It gave her, she said, a "healthy distrust of where we
get our food." Read full story>
