Linda
Soper-Kolton
graduated from New York's Natural Gourmet Institute for Health and
Culinary Arts in Manhattan where she studied health-supportive cooking
and whole food dietary theory. She is passionate about inspiring and
educating people to explore and expand healthy dietary choices which
will improve their overall wellness, and at the same time support a
better, greener environment. A life-long "foodie", Chef Linda delights
in using the freshest, most nutritious ingredients to create new ways of
bringing health and great taste to the table. Currently enrolled in the
world's largest nutrition school, Institute of Integrative Nutrition,
she will supplement her current knowledge about health, nutrition and
cooking with certification as a Health Counselor.
Working with Youth Chef Linda is also strongly motivated to help
children understand where food comes from, why eating well is an
important habit to develop at an early age, and how to develop kitchen
skills so that healthy food preparation is possible.
Chef
Linda is involved with the First Lady, Michelle Obama's campaign,
Chef's Move to School, aimed at helping to reduce childhood obesity in
the United States and getting healthier food into our schools. She
teaches classes to parents and children in schools as well as public
classes at GreenGourmetToGo in Black Rock, such as Meatless Mondays,
Converting Unhealthy Recipes to Healthy, Vegan Meals, Whole Foods
Basics, Vegan/Gluten-Free Baking, and more. She is also a member of the
local elementary school's Wellness Committee, Fuel for Learning
Partnership (a parent's advocacy group whose mission is to improve
school food), and has worked to bring healthier food, physical fitness and other opportunities to expand and enhance the wellness of the children in our community.
GreenGourmetToGo
is also the caterer for Easton Country Day School's lunch program,
providing children with creative and healthy food and exposing them to
new tastes, textures and ideas.
Chef Linda lives with her vegetarian husband (formerly a raving carnivore and now the "poster child" for how one can completely change bad habits for good, get off all medications and live a healthier, skinnier and more mindful life), her 10-year-old son who battles food sensitivities, is vegetarian and one of the pickiest eaters ever encountered, her two pugs and cat - who eat fresh, not fast food. Her family continues to humor and indulge her and benefit from her quest for health, happiness and good food.
